The cuisine team at Six Senses Laamu is headed up by Executive Chef, Martin Davies – who has also spent time managing the culinary team at COMO Parrot Cay – in partnership with the Six Senses Laamu gardeners, to make up a ‘Farm to Pool’ food philosophy that makes the resort noteworthy for its outstanding cuisine:

If the thought of it makes you want to freshen up your own lunchtime fare, Chef Martin has kindly shared one of his favourite Farm to Pool recipes that promises to give you a taste of Maldives holiday heaven:

Six Senses Laamu’s Crispy Goat’s Cheese Salad


20 grams of mixed lettuce leaves
Five cherry tomatoes cut in half
A quarter of an onion
Three goat’s cheese patties
One tablespoon of mango compote
Four sun-dried tomatoes
Micro herbs
Balsamic dressing
Salt & pepper


  1. Pane the goat’s cheese in flour, egg and panko breadcrumbs, then shallow fry the goat’s cheese until golden.
  2. Combine lettuce and dressing.
  3. Garnish with homemade sun-dried tomatoes, mango compote and micro herbs.
  4. Arrange the crispy goat’s cheese on top of the salad.
