With early culinary dreams to earn his own Michelin Star, Executive Chef, Marc de Passorio has doubled his achievement, having swooped the mark of expertise twice since 2009. The next step in his career is to bring guests of One&Only Le Saint Géran a dining experience worthy of the resort’s prestigious legacy.
Having gained over thirty years of international culinary experience, plus boasting expert knowledge of spices and herbs from across the world, Marc has brought a global dimension to the culinary offering. He currently oversees the four One&Only Le Saint Géran restaurants, each offering an individual experience, with each meal time introducing something new.
From casual toes-in-the-sand seafood under the sun, to heady Asian flavours sizzling in the twilight, culinary magic is cast across the resort. Tapasake has a stunning setting, housed in a thatched Mauritian structure stilted above the glimmering lagoon, where an exciting, theatre-style, cooking display conjures up Sushi, Teppanyaki, Batayaki and Tandoor cuisine.

Every good meal deserves a good dessert, and that’s where Executive Pastry Chef, Simon Pacary comes in. Hailing from the patisserie holy ground of France, he has taken his innovative flair across gourmet greats, learning from the renowned Chef, Olivier Bontemps and turning his hand to five-star and Michelin-star resorts across his home country. Having pushed the boundaries of his craft, Simon has claimed for himself the art of incorporating unexpected ingredients into his sweets, presenting desserts featuring oysters and caviar.

However, it is not all just about show. Simon may like to challenge traditional takes now and then, but what really motivates his dessert creation is the desire to spread the happiness he believes they bring. At One&Only Le Saint Géran, he holds the reigns at L’Artisan, the resort’s artisanal bakery that offers sweet treats, coffee and light bites in a laid-back setting throughout the day.

Alongside the vibrant food offering, One&Only Le Saint Géran has an equally enticing selection of wines, cocktails and spirits to complete the dining experience. Sommelier, Michael Bongrand, has worked at the resort for nearly seven years, taking a brief break in 2016 to source new producers in France to add to his hand picked selection of over four-hundred vintages to complement every dish.
At Tapasake, you will also find an innovative menu of gastro-inspired cocktails; recline on the over-water lounge seats as the DJ plays chilled-out beats for the ultimate magical Mauritian moments.
