A chef-driven dining concept, the new menu has been designed and managed by polished international chef Eric Drogueux.
His previous experience includes time spent in the industry’s most impressive kitchens, such as St Regis Bora Bora Resort in French Polynesia and under the tutorship of three Michelin Starred chef Eric Frechon. The 13°59° concept is heavily influenced by Drogueux’s fine European training and Polynesian experiences together with the flavoursome cuisine of the Mediterranean and modern Asian elements.
The kitchen design is also inspired, making Drogueux’s hand-picked team of chef’s reach their maximum creative potential for diners, while the concept has been created with the intention of supporting local farmers and independent fishermen on the island. Of course, no restaurant worth its salt in Barbados can impress without a reputable rum punch recipe and 13°59°’s evening Happy Hour is sure to impress even the locals.
